4 Simple and Healthy Pancakes

From carrot cake to blueberry, these inspired hotcakes are not only good for you, but tasty too.

2-Ingredient Banana Pancakes

INGREDIENTS

  • 1 medium ripe banana

  • 1 large egg

  • Canola oil

  • Butter, for serving

  • Syrup, for serving

INSTRUCTIONS

  1. Heat griddle or nonstick pan over medium heat.

  2. Mash the banana in a bowl until smooth. Mix in the egg.

  3. Once pan is hot, lightly oil with canola oil. Once oil is hot, add no more than 3 tablespoons of batter to the griddle and cook, until golden brown (about 2 minutes per side).

  4. Carefully flip the cakes with a flat spatula.

  5. Serve with butter and syrup.

Carrot Cake Pancakes

INGREDIENTS

  • 2 medium ripe bananas

  • 1 large egg

  • 1 medium carrot, peeled and grated

  • 1/2 cup yogurt

  • 1/4 teaspoon ground cinnamon

  • 2 teaspoons honey

  • Coconut oil, for cooking

  • Fresh berries, for serving

INSTRUCTIONS

  1. Heat griddle to medium heat.

  2. Mash bananas until smooth in a medium bowl, then stir in egg, carrot, yogurt, cinnamon, and honey.

  3. Add 2 teaspoons coconut oil to the hot griddle to melt. Once hot, add no more than 3 tablespoons of batter to the griddle and cook, until golden brown (about 2 minutes per side).

  4. Carefully flip the cakes with a flat spatula.

  5. Serve with fresh berries.

Banana, Peanut Butter, and Oat Pancakes

INGREDIENTS

  • 2 medium ripe bananas

  • 1 large egg

  • 3 tablespoons natural peanut butter

  • 2 cups rolled oats

  • 1 1/2 teaspoon baking powder

  • 1 tablespoon real maple syrup

  • 1 1/4 cups milk (almond milk or cow’s milk are both fine)

  • Pinch of salt

  • Nonstick cooking spray

  • Sliced bananas, for serving

  • Syrup, for serving

INSTRUCTIONS

  1. Heat griddle to medium heat.

  2. In a blender, mix banana, egg, peanut butter, oats, baking powder, maple syrup, milk, and salt. Blend on high speed until smooth.

  3. Spray griddle with nonstick spray. Once hot, add 1/4 cup of batter to the griddle and cook, until golden brown and bubbles form all around the edges (about 2 minutes per side).

  4. Serve with sliced bananas and syrup.

Fluffy Cottage Cheese Blueberry Pancakes

INGREDIENTS

  • 3 large eggs

  • 1/2 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 cup cottage cheese

  • 2 tablespoons real maple syrup

  • 1/2 cup fresh blueberries

  • Nonstick cooking spray

  • Fresh berries, for serving

  • Syrup, for serving

INSTRUCTIONS

  2. In a large bowl, mix together eggs, flour, baking powder, cottage cheese, and maple syrup. Stir in blueberries.
