Easy Taco Meal-Prep Bowls

Meal Prep Suggestions

Ingredients

2 cups cooked Brown Rice

  • 2 Tbs olive oil
  • 2 lbs ground beef (grass fed beef, ground turkey or chicken optional)
  • 1 Tbsp Chili Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/4 tsp Dried Oregano
  • 1/2 tsp Paprika
  • 1 1/2 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 cup salsa verde
  • 2 cups black beans, drained and rinsed
  • 2 cups whole kernel corn, drained
  • 4 Roma tomatoes, diced
  • Fresh cilantro for garnish
  • Lime wedges for garnish

Instructions

  1. Cook rice according to package directions and set aside.
  2. Heat olive oil in a heavy skillet over medium high heat.
  3. Add ground beef and use a wooden spoon to crumble it, breaking it up
  4. After it is broken up a bit, and starting to brown, add all the seasonings.
  5. Stir well.
  6. Add salsa verde and stir to combine
  7. Brown ground beef, crumbling as you go.
  8. Once browned, remove from heat, and drain the grease off.
  9. Slice tomato into chunks
  10. Divide rice into 8 Meal Prep Containers .
  11. Divide ground beef mixture, black beans, corn and tomatoes amongst containers
  12. Sprinkle cilantro on add a lime to squeeze over top
  13. Finally, this meal can be refrigerated for 3-5 days
  14. Feel free to serve with extras such as sour cream (plain Greek yogurt), avocado, etc.

Notes

This makes 8 servings, with approximately 400-500 calories per serving.
