Garlic-Parmesan Chicken- Slow Cooker Style

Ingredients

4 tbsp. extra-virgin olive oil, divided
2 lb. bone-in chicken thighs
Dash-kosher salt
1/2 tsp. Freshly ground black pepper
1 lb. baby red potatoes, quartered
2 tbsp. butter
cloves Garlic, Chopped
2 tbsp. freshly chopped thyme
Freshly chopped parsley, for serving (optional)
1 tbsp. Freshly Chopped Parsley
3 tbsp. freshly grated Parmesan, plus more for serving

Directions

  1. In a large skillet over medium-high heat, heat 2 tablespoons oil. Add chicken, season with salt and pepper, and sear until golden, 3 to 4 minutes, then flip and sear 3 minutes more.
  2. Meanwhile, in a 6-quart slow-cooker, toss potatoes with remaining 2 tablespoons oil, butter, garlic, parsley, thyme, and Parmesan and season generously with salt and pepper. Add chicken to slow cooker and toss gently, then cover and cook on high for 4 hours or low for 8 hours, until potatoes are tender and chicken is fully cooked.
  3. Garnish with Parmesan and parsley and serve.

A slow cooker can usually be left unattended all day for many recipes.  You can put recipe ingredients in it before going to work and come home to a meal.  A slow cooker meal is an excellent choice for a busy day, whether you work in or out of your home.

But there’s more: If your mornings are too hectic to actually get the ingredients for dinner into the slow cooker, try the night-before technique. Toss everything into the pot before you go to bed, and then turn the appliance on. When you wake up, transfer that perfectly cooked meal to a plastic container, let it cool to room temperature while you shower, then refrigerate it. The flavors will intensify so it’ll taste even better when you reheat it that evening.
