Simple Egg Salad Sandwich Recipe
If you want to make this a bit healthier, remove the yolk from some of the eggs, use light or low-fat mayo, and pile extra vegetables onto your sandwich!

Eggs and mayonnaise are the base, but it’s the details, the extra ingredients, the spices & herbs, that really packs it with flavor. This is the best egg salad sandwich recipe because I’ve also added in a delicious homemade herb blend!
IS EGG SALAD GOOD FOR YOU?
Eggs are full of protein, but other than that, it isn’t the healthiest thing. This egg salad sandwich recipe is quite reasonable when it comes to calories and fat grams though.
INGREDIENTS
- 8 large eggs hard-cooked (click for recipe)
- ¼ cup mayonnaise
- 2 teaspoons lemon juice fresh squeezed
- 2 small celery stake diced
- 4 scallions white & pale green parts, thin-sliced
- 1 teaspoon dried Parisien Bonnes Herbes blend
- ¼ teaspoon black pepper freshly ground
- ½ teaspoon kosher salt
- 1 teaspoon Dijon mustard
- ½ teaspoon granulated sugar
INSTRUCTIONS

Mix all ingredients together in a large mixing bowl. Season to taste with more salt, pepper and sugar.

Serve on a bed of lettuce or as a sandwich.

Egg salad should be kept refrigerated, in an airtight container up to 5 days.
