The best Go To- sneaky snack recipe ever!


  • 1/2 cup pitted dates if hard then soaked in hot water for 5 minutes and then drained
  • 1 egg
  • 1/4 cup coconut oil melted
  • 1/2 cup unsweetened apple sauce
  • 1-2 Tbsp honey (optional: maple syrup)
  • 3/4 cups old fashioned rolled oats made into oat flour
  • 1 cup old fashioned rolled oats
  • 1/2 cup chopped cashews (optional: chopped walnuts)
  • 1/2 cup sesame seeds
  • 1/4 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/8 all spice
  • Optional:  add 1/2 cup of dark chocolate chips!


  1. Put all wet ingredients and dates in a blender and blend until smooth.
  2. Combine wet and dry ingredients.
  3. Scoop out one large ice cream scoop per cookie and place on a parchment paper lined baking sheet and flatten with your fingers to about 1/2 inch thickness.
  4. Bake for approximately 20-25 minutes until golden. Beware of not burning the bottoms.
  5. Cool on a cookie sheet and store in an airtight container preferably in the fridge.
  6.  Serves 12
